This MSci programme focuses on the scientific principles behind food production and consumption. You will gain a comprehensive understanding of food science, which covers the physical, chemical, and microbiological aspects of food, aiming to enhance its quality, safety, and appearance. Concurrently, the course delves into nutrition, exploring the essential nutrients required for human health across all life stages, and its role in both health and illness. The programme emphasizes the crucial interrelationship between food science and nutrition, highlighting their equal importance in the entire food system, from production to consumption.
The curriculum covers a wide range of subjects including food biochemistry, chemistry, commodities, hygiene, marketing, microbiology, policy, processing, product development, psychology, quality, and safety. It also includes fundamental and clinical nutrition, human physiology, diet and health, business innovation, and entrepreneurship. Students undertake modules equivalent to 40 CAT points in each stage. The programme includes a mandatory work placement of at least 40 weeks.
